Ace Hotel Sydney is our first-ever spot in Australia, set in the verve of Surry Hills. Inspired by the neighbourhood's vibrant rhythm, Ace Sydney is home to a bustling public Lobby alive nearly nightly with DJs and performers, a rebellious art program and sunken lounge just off the Lobby bar. About Kiln

Named Good Food Guide's Best New Restaurant of the Year 2023, this daring menu is curated by the culinary alchemist Mitch Orr, whose inspiration emphasises Italian, Japanese, and Southeast Asian flavours. RECOMMENDED SKILLS/EXPERIENCE

Please note: You should have a minimum 2 years previous experience in the above or similar roles.


REQUIREMENTS

  • Flexible roster with shifts varying from Tuesday to Sunday consisting of lunch and dinner services
  • Leading, directing & mentoring junior chefs on shift and assisting with their development
  • Design & prepare quality dishes, while supporting the Head Chef and Sous Chefs throughout service
  • Be flexible to guest requests, allergies and dietary needs
  • Checking goods received & managing stock levels
  • Comply with all HACCP standards & company food safety procedures
  • Ensure all dishes are executed to the highest standards in a timely fashion
  • Maintain par levels of ingredients, stock rotation and minimising wastage
  • Manage and maintain the cleanliness of the kitchen


About You

  • Have a minimum 3 years experience in a kitchen supervisory role
  • Previously worked in a hatted restaurant, with preferred wood fire experience
  • Effective communication abilities, coupled with a courteous and respectful demeanour
  • Creative character with attention to detail, and a flare for innovation
  • A positive and flexible personality who works well under pressure
  • Experience in coordinating and managing a team through a ‘lead by example’ approach
  • Broad, insightful knowledge of food & produce
  • Seeking to develop your skills and career further
